What did you think....


about Tiger Woods' speech. I thought it was eh..alright. Don't fully think it was sincere and seemed more like a presidential speech to me. He really showed no remorse or sincerity or even emotion (besides when he was getting visibly angry about the paparazzi chasing his wife....reason he needs anger management, I think so) I do think that it was good of him to publicly apologize since so many thousands of children look up to him as a role model. After all, he did not HAVE to go up on national television and say anything at all but he did. On the other hand, this man may have done it for pure attention, to get fans back and even for good ratings for his sponsors which all in all equals $$$! I guess we'll never know. I just hope his beautiful wife and 2 adorable children don't have to be sucked into this horrible tragedy even more than they already have.

If Elin stays with him, she is a very brave, confident strong woman...God knows she has more nerve than I do :)

Valentine's Day!


This Valentine's Day marked our 8th one together! We had such a sweet and fun time. We celebrated early and went out on Friday night well...because we had a babysitter :) We went to a yummy Mexican restaurant in El Dorado Hills where I ordered this very yummy strawberry margarita. We shared the beef and shrimp fajitas and then a scrumptious churro sundae! Yum! Next I gave Zach his card and it had a little (big) surprise in it!



This is what he found in his card!! Yes, I booked a trip to St. Thomas!!! We leave March 31st and come home April 7th. I am so excited but also nervous to leave the kids and be sooo far away from them, but I know they'll be in good hands! The look on Zach's face when he read this was priceless and I think he was shocked that I actually did it,haha! So over dinner and dessert we talked about how we wanted to really kick it in gear and get in shape for this trip. Now mind you its only 6 weeks away so we know we have to set a feesable goal and we wont have the body of our dreams before we leave but we'll be skinnier, healthier and feel better about ourselves. I think Zach looks great by the way ;)

After dinner we went to see the movie Valentine's Day and it was really cute. Nothing outrageous and pretty predictable but still cute! And I love me some Bradley Cooper and Ashton Kutcher <3 The next morning I woke up to a beautiful red daisy on the pillow next to me and these rose petals scattered all the way down the hallway. What a romantic I married. It led to the kitchen where I found this homemade breakfast my honey had made for me. Pancakes, ,eggs and toast with fruit and juice!

So all in all, we had a wonderful Valentine's Day and cant wait to spend a week in the Virgin Islands!!!! I am so happy that Zach is my one and only valentine. I wouldnt pick anyone else in the world to spend this special day or any other day with. Thank you Zach for always holding my hand, supporting me, and just being my best friend. I love you to pieces!!!

What We've Been Up To...


We have been very sick around here! First I caught the flu, and then passed it to Zach! He then gave it to the kids and at first I thought they just got the cold(runny nose,cough) part, but we weren't that lucky. Riley and Trevor's cough kept getting worse and then Ireland woke up one morning with a runny nose and it all went downhill from there. Fevers started 2 sundays ago on Jan. 31st. There was high fevers, horrific coughs and NO SLEEP! Finally Trevor just sounded awful, had a on-going fever for 5 days and I finally took him into the dr. He had Pneumonia!!! How scary is that! So they started him on some strong antibiotics. Then Rileys fever reappeared and one afternoon she fell asleep on the couch(which I knew she was really not feeling well because she never falls asleep like that) She woke up with a 104 temp. and bright red blothches all over her body. I freaked out and it was Sat. night so I knew the pediatrician was closed so I rushed her to the ER. Thankfully it wasn't very busy and we were only there an 1 1/2. They said she had a bad virus and an ear infection. They started her on amoxicillan and I as a mother could only bet that Ireland has an ear infection as well so shes been taking it too. They are finally starting to feel better and thank god because Im starting to go crazy in this house!!!

Apricot Chicken with Stuffing


One of my favorite fall and winter recipes is this. Its so yummy and even the kids devour it!

4 skinless chicken breasts
1 box of Stove Top Chicken Stuffing
1 jar Apricot Preserves

(yes thats it...thats all the ingredients you need!!)

Preheat oven to 350. Place chicken in baking dish and cook for 30 mins(or until cooked through). 5 mins before chicken is done prepare stuffing as directed on box. Once chicken is done spoon the stuffing all around chicken. Then spoon the apricot preserves on top of chicken(use whole jar) Cook for another 5 mins on 350 and serve!

Valentine's ideas?

Just 2 weeks til Valentine's Day! Anybody have any plans? I wanted to either make some cute crafty valentine's Day cards with the kids or I saw this website on another blog and thought their stuff was so adorable and quaint- http://www.etsy.com/shop/prettyfnmess

I think I'm going to go put my little heart wreath on the front door and my tablecloth and heart shaped place mats on the kitchen table and make it a little festive in here. The kids are sick today so maybe we'll cut out some red hearts and hang them on the front window if they feel up to it <3
